Ommmmmm Pasta Recipe

I admire Indian food, but Eugene doesn't have a great Indian restaurant.
So I got tired trying to get an Indian comfort in these okay restaurants, and dealt with it in my own kitchen!
That's how and also why, I created this Indian style pasta recipe.
I named it "Om Pasta" since when you eat it you come to perfect harmony with yourself - just like the Om singing (Ommmmmmm) in Yoga. Makes you feel so calm, free and relaxed.
I prepared it again, a few days ago to celebrate a month birthday to my blog in Hebrew, and published the recipe there. To Practice the deep themes of Yoga and Pasta traditions (world peace, comfort, sharing, letting go) I am more than ready to publish this recipe here, for the English readers as well.

Om Pasta

*(Ingredients for 3-4 servings)

1 pound chicken breast tenders (for vegetarians: replace the chicken with deep fried eggplant slices)
1 cup of frozen green peas

3 tomatoes -
(cut into big pieces)
1 onion
(cut into big pieces)
1 large garlic clove
(cut into small pieces)
5 small sweet yellow/orange/red peppers -
cut pepper into halves - lengthwise (or 2 large yellow/orange/red cut into stripes)
1 bunch of cilantro (or parsley)

1 cup of pure tomato sauce

1 full teaspoon of hot curry powder

1/2 teaspoon of garam masala powder
(about)
1 cup of boiling water
flour
salt
olive oil
1LB (454 g) Pasta (spaghetti)

In a large pan stir fry the onions, peppers and garlic for about 2 minutes.

Indian cooking Pasta RecipeAdd the tomatoes, the tomato sauce and the boiling water and stir. Add the cilantro, the green peas, the curry, the masala and the salt (to taste), and stir. Bring to boil and lower heat.

Flour the chicken tenders in a flour mixed with a bit of salt.
In a different pan, fry the chicken tenders briefly (only for 1/2 a minute each side) until the flour becomes golden.

Indian cooking Pasta RecipeAdd the fry chicken breast tenders to the cooking sauce in the other pan. Bring to boil and lower heat. Cook for 20 minutes (add more boiled water, if needed).
