Sunny Side Chicken With Oranges

- "What's for dinner"?  she asked, sitting inside the sink waiting for fresh water to come out of the tap. My bilingual cat, who understands both Hebrew and English, likes to be petted and to talk with you when you are sad.
- "That's a good reminder, Kitty... now what could we make for dinner?.....Why don't we make a Sunny Side Chicken, everybody loves it!".
- "Sunny side chicken? I thought you don't like omelets...." she mumbled with her green eyes.
- "You are right - I don't. I'm talking about our favorite chicken dish, with oranges ,oh you know! -  whenever I prepare it you say that the wonderful smell of the chipotle pepper while cooked, makes you feel like you are in some Latino resort, sitting on the beach relaxing, feeling your appetite growing and unable to stop thinking about dinner...".
- "I don't know what you are talking about .....I hate vacations.... why don't you open the water for me instead?" she whispered.
- "Well, we are not going anywhere and here are some fresh water for you, cool yourself and later you can stay in the sink, watch and learn".

Sunny Side Chicken

2-3 servings

1 1/4 pound (600 g) Chicken boneless legs
1 big onion cut into large pieces
2 garlic gloves - sliced
2 peeled oranges -  cut into large pieces
1 small  dry chipotle pepper (smoked hot pepper) cut into half (the chipotle pepper can be really spicy so - be responsible here! )
2-3 yellow corns cut into halves
4 potatoes cut into halves
1-2 sweet potatoes cut into halves
2 spoonfuls of orange jelly
3 spoons of soy sauce
2 spoons of dried rosemary leaves

Put the chicken, the potatoes, the garlic, the oranges, the corns and the pieces of the dry chipotle pepper in a Pyrex pan.

In a small bowl, mix the soy souse, the orange jelly , the salt, the dried rosemary and the cumin. Add about 1/3 cup of water and mix again.

Pour the mixture on top of the chicken, the corns and the potatoes.

Add water to the height of 1 1/2" ( 4 cm ). cover with foil paper.
Bake in oven set at 400 degrees Fahrenheit (200 Celsius) for about 1 1/2 hours. 

* From time to time pour some sauce on the chicken and potatoes. Also Check  if there is a need to add some water, you don't want the pan bottom to get dry ( if needed add boiling water).
After 1 1/2 hours, remove the foil paper and bake for another 10 minutes - or until it looks golden and great!

Serve with green salad and red wine!

That looks like a good meal. Good enough to convince the Kitty to clean the dishes.
